True hydrolats, such as ours, originate from the steam distillation process. This process uses the water that has been distilled with essential oil. Some processes use mountain spring water producing better quality material. Such water is run through the plant material many times during the extraction - a system called cohobation. This method gives a hydrolat which is particularly concentrated and charged in the active hydrosoluble parts of the essence. From ground to plant to water.
